Jaymie Forrest, managing director of the Georgia Tech Supply Chain & Logistics Institute and co-founder of the Integrated Food Chain Research Center (IFC), authored the Cool Insights column for the October edition of Food Logistics, titled “Processing Produce at the Speed of Light.”  For the column, Forrest discusses how ScanTech Sciences, a company started in Georgia Tech’s Advanced Technology Development Center and a participating technology for the IFC, has spent more than a decade working on a new technology to treat produce for pathogens.  Working closely with the USDA, ScanTech is planning to open a facility in Texas which will enable this new technology, which significantly improves bottom line profitability and is incredibly safe, to be used on fruits and vegetables that are crossing the border in both directions.

For the past three years, faculty, staff, and partners of the Georgia Tech Supply Chain & Logistics Institute’s IFC have contributed their thoughts on various aspects of the food chain to Food Logistics Magazine under a column called Cool Insights.
